Last week Boo bid goodbye to his wonderful aides from the last few years.
Unfortunately it came as a bit of a shock as things have been a tad disorganised, so his last day kinda snuck up on us but bygones… he is now at his new school for whateverthefuckitiscalledthatyoudotwoweeksbeforetheendoftheyear.
And two of his old aides are tag team shadowing so YAY.
So on Sunday while the heavens dumped 40 years worth of rain in my backyard, Boo and I set to work to make these.
Cherry Ripe and Peppermint Crisp Christmas Balls.
250g Marie Biscuits (or any other plain sweet cookies)
180g Lindt dark chocolate or choc bits (I used the first with the Cherry ripe and the latter with the Peppermint Crisp) melted in the microwave
3 Cherry Ripe bars chopped finely / 2 Peppermint Crisp bars crushed (either with a mortar and pestle or with a rolling pin) depending on which on you are making
1/2 cup coconut
395g tin sweetened condensed milk plus a drizzle more (you can use the rest in a mexican coffee OMG YUM)
2 cups coconut
red and green food colouring
Place a cup of coconut in 2 resealable baggies. In one bag add 10 drops of green food dye, 10 drops of red in the other and seal the bags. Massage the bags thoroughly to spread the dye through the coconut while discussing with your husband how to crush the Marie biscuits and chop the Cherry Ripe and Peppermint Crisp because you have to go and deliver the enormous Turkey Breast Buffé for Christmas Day you just bought to MOTY’s place cause it won’t fit in the damn freezer.
Once the coconut is mostly covered, open the bags and give them a bit of a mix by hand and then leave the bags open. Dunno if you need to do this but my brain thinks that you need to let it dry, so maybe you should.
Or not. Live dangerously.
Go and deliver the turkey and have a big ol’ cry when you are informed that the family Christmas party is at that motherfucking park AGAIN that the other side love so much and Boo HATES and you are just so fucking over it.
Return home and get the baking party started.
Boo, who has done a food handling course at school and is completely certified with a certificate and everything apparently, was Head Chef so that meant I got to organise everything while he just swanned in and did the fun stuff.
Except for bashing the shit out of the biscuits. I got to do that. Cause MPS was rolling the rolling pin over the biscuits in the bag to crush them all calm like and I came home after delivering the turkey in a mood and was more than willing to take it out on some innocent baked goods.
Bitches got crushed. With vengeance.
And then transferred to a bowl.
Add the Cherry Ripe/Peppermint Crisp and coconut and mix it well to ensure that there is a little chocolate goodness in every morsel.
And then dump in the melted chocolate and sweetened condensed milk, adding a little extra of that heavenly goddess given goodness if needed to keep them nice and moist.
Use your hands and get good and dirty.
Roll into balls and then into the coloured coconut.
Red for the Cherry Ripe. Doing a fab job there buddy!
Green for the Peppermint Crisp.
Then into cute little jars, with hand written tags and an afternoons work for 3 years of wonderful work from some amazing remarkable ladies.
Hardly seems enough.
But I know they will appreciate the fact that Boo did it.
