I have always been of the belief that you should thank your childs teachers at the end of a hard school year with a little gift.
Just to show them that you appreciate all they do.
When The Damn Emo’s were little it would be the standard chocolates and coffee mugs, or a bottle of wine if I got to know them well.
When Boo came on the scene and had a million people working their rings off to help him, I kinda got all fucking manic about MAKING SOMETHING MEANINGFUL and putting in days of effort to make something to show how much the teacher/aide/support staff were appreciated.
This year has been a rocky one for Boo. The Girl, change to classrooms, Lump (who is bigger and stronger than ever at the moment) teenage hormones and a myriad of other things have all culminated in the perfect storm of fuckedupedness and we have all been riding it together.
Many people who I have yet to even meet (high school sucks for getting to know your kids teachers and support staff) have spent countless hours helping my boy.
So instead of individual gifts, and the very definite possibility of leaving someone vital out, I have spent a few
weeks days in the kitchen to provide morning tea to say HEY YOU ARE FUCKING AWESOME HAVE A COOKIE/CUPCAKE!
Candy Cane Cupcakes for the support staff at the mainstream school.
Toffee meringues and mini Belgian chocolate chip stars…
…large choc chip shortbread stars and caramel shortbread trees. I used this recipe. Freezes AWESOMELY!
And chocolate fudge cupcakes with milk chocolate icing, vanilla cupcakes with white chocolate icing for the Specialist School cause there are like HUNDREDS (slight exaggeration) of people working with him there.
I hope they like chocolate. Heh.
I must add that MPS covered the boxes for me, the cupcake one is actually a cut down lego box.
As a bonus, and because I have made the recipe so many times in my life that I know the entire thing off by heart, here is a recipe for the Toffee Meringues.
As the other fat man in a hat says:
Trust me, they are da bomb.
These have to be hands down the most popular thing I have ever made. Even when MOTY stores them in an old laundry powder box and they smell like soap some people (not looking at you Ally) will eat the entire box anyway.
Apparently you are supposed to put creme of tartar or some shit in meringue but I never do, and they come out all crunchy and airy with a chewy toffee like centre.
You will need:
3 large egg whites
1 cup of caster sugar
a glug of REAL vanilla essence. Don’t use the cheap stuff (ew) or vanilla beans/paste. The flecks of vanilla look really odd and they could be mistaken for mould.
Whip the shit out of the egg whites until they are white and foamy.
Slowly add the caster sugar until combined and then the glug (maybe a teaspoon?) of vanilla and whip it till you can’t feel the sugar crystals when you rub a little between your fingers.
Transfer to a piping bag with a large star tip and pipe onto a parchment/glad bake covered tray.
Don’t worry about leaving space, they can butt right up next to each other cause they don’t spread.
Bake in a 160C oven for 40 minutes and then turn the oven off with them still inside and leave in for a few hours or overnight.
Try not to eat them all.
